2008 Triumph Rocket III Touring
I currently have a set of the TORS pipes mounted on my 08 R3T. It is running the proper Triumph tune for these pipes.

If I go to triple K&N's, I will need a new tune, right? What tune would I want? Would my dealer have one?

You can put Tune's in yourself with Tune Ecu. You can read a lot on the Forum about it it.

As Hans said, you will need a different tune. Your dealer will not have a tune suitable for the 3 K&Ns. Tuneboy, TuneEcu or Power Commander are your options.
 
I have seen that I can load tunes with TuneECU. I have to look into getting the cables all together for that.

If I go this route, I am NOT smart enough or brave enough to make my own tune. I am not looking for rediculous off the hook power either. I would like a little more is all. A little more sound, a little more scrumpf, and hopefully a touch better mileage. What tune would I want to use? Is there one made up already or am I looking at dyno time?

The main goal of this is to free up some space under the seat for a small compressor so that I can mount some airshocks on the rear end. I really want to be able to adjust the shocks like a Goldwing can. I find it to be a pain to dis-mount and remount the saddle bags everytime I want to adjust things. Reason being that when the stock shocks are setup for me, they are too soft for me and the girlfriend and/or trailer. So air shocks.
 
You should be able to find a suitable tune for your setup. If not, a custom tune may be your only option.

By going with the triple filters you will obviously need more fuel to go along with the increased air intake. Those changes will likely result in worse mileage rather than better. You can leave your O2 sensor connected and get reasonable mileage in closed loop at steady cruise, but in open loop you'll likely use more fuel.

Not sure where you're located, but if you're on the east coast of the US you might want to contact Wayne at Power-Tripp. He's the man when it comes to tuning these things.
