For the same reason you don't go cross country on a Formula One car, or use slicks during the Baja races. Now, the issue of altering the geometry of the bike got my attention. Like I always say, if I were to do a cross country ride,and about 25 years younger, then darkside it would be. They handle good enough, but are no match for the ride of a new "Motorcycle" tire.
