I was actually getting bored with just spices and marinated. Idea popped in my head one afternoon,few trial and tweaking ques later,the family and friends won’t let me cook it any other way now.
Don’t knock it till you give it a go, for me it was a game changer.
 
I need a fresh take on scallops if you have one. Starting to a little bored with garlic/butter and pearl onion. I also do an Italian style with certain oil and spices,but Those are my only two.
Got something else?....Before Jim jumps in and says we ain’t talking motorcycle :laugh:

Not store bought,make my own. I really enjoy it when it caramelizes. My sister in law thought I slightly burnt a prime rib roast on the spit till I gave her a slice...comment was...”it’s meat candy”

Me mixed boudin, table sausage, chorizo, rotel tomatoes, queso blanco, Cajun spices n gonna put smoke on it, then bake it to make a frito dip
