Given that the raw product for my Apple Pie runs around 180-190 proof, what octane is that ?

If its drinkable, its ethanol. At 180-190 proof, the octane rating would be around 110 for research octane number, motor octane number, and for the US used anti-knock index.
 
I had a 2003 Triumph Sprint ST a while back. Thought I would be smart and ran 110 octane in it. Big mistake. It took several tanks to get the carbon cleared out of the cylinders. Prior to the 110, it started wonderfully and you could tear off right after start up. After the 110, it was very hard starting and needed to warm up.

That octane slows the combustion down to prevent detonation and ping. If your motor doesn't need it, the combustion process runs 'cooler' than it needs and fouls things up.

I will never again use it in anything but a race car (if I am ever fortunate enough to own one).
