How much time should a mechanic/shop bill to change & balance a rear tire on RIIIR?

I agree. That's insane.
Front = Dunlop D404 $128
Rear = Riken Raptor ZR $90
Mounting = $40
Total $258.
Extend that out over 3 years. 3 fronts, 1 rear. $554.
Works for me and my riding style.

You know I just realized I screwed up!
My listing of $100 was if THEY removed the wheels.
When I do it the mount & balance is only $25 per.
So, my real total (when home and not out on the road)
should be $384.00.

do you tell them to remove final drive and grease the rear end of the drive shaft. this is what needs to be done . not just the splines on the rear wheel.

I remove it every time and I also now tighten things up sequentially per @Rocket Scientist's recent tip.
