Ro6ert,
Why would you want to keep the cat box?
Chunk that POS as soon as you start on the TORS.
I have exactly what you're talking about doing.
cat bypass, TORS, Gi-Pro w/ATRE, secondaries removed, and 5 k&N filters.
Ran WAY lean till I hooked up the Dobeck EFI controller.
Also gonna remount my single exhaust,
so goody goody, I get to start all over again...

What can you expect?
quicker throttle response (without the secondaries, and with the Gi-Pro).
more OOMPH off the line.
Better sound,(w/ TORS)
increased HP,(without the cat).
Thats about all I can think of,
unless you want to include wheelies on command,(setting 1, 2, or, 3)
and spankin other bikes, (Just cause you can).

I just see no real reason to put them on, no noticable gain and since I am no mechanic I couldn't care less bout ease of access. Looks much slicker without them too

Actually there are gains in both HP & TQ & more importantly spread of TQ ( broader) Dyno tuned, adding K&N's will give around 8-10raw HP/TQ peak but you will be holding onto the peakTQ for much further up the rev range, where the standard setup is gasping.

Catbypass Tors & triple K&N definately need a new tune. Pm me an email & I can send you an excellent dynoed tune I had done for similar set up .( You need Tuneboy to install)
