Why do trials riders stand up on the pegs, raising the combined CG for better control?
Because they can alter their GoG without changing contact.

It also depends a bit who is riding.

I suspect that with @BigNorm on board the combined CoG is higher than with me on board.
There is also the question of 3D MASS centralisation to take into account.
 
There is a science to it, to wit:

Both CG height and tire width influence lean angle.

SNIP: "The actual lean angle between the frame and the vertical must increase with tire width and decrease with center of mass height. Bikes with fat tires and low center of mass must lean more than bikes with skinnier tires or higher centers of mass to negotiate the same turn at the same speed."
