Launch control is basically an anti-wheelie control program. It allows starts with large throttle openings and a "dumped"clutch, the ECU balancing the power and tyre grip to give maximum acceleration without the front wheel coming up.

When you see a MotoGP rider doing a wheelie after the race, it's HIM doing it, not the bike.

Shift assist/quickshifter allows clutchless throttle-on gear changes by momentarily adjusting the engine operation so the gearbox bits line up. The Rocket quickshifter allows all up and down changes including first gear. With down changes, the ECU even "blips" the engine to get the revs right.

That's a shame. ime - it is actually fairly easy to get the rear to let go on a 2009 2.3 if you ride on peak torque. Scary Easy.
And Mr @Steel has problems keeping the nose down anyway.

I have only attempted launch control on the baby-duke once - Kerist! - Told that on the big KTMs it's truly scary as the front comes up anyway. On the R3 - Nah- sorry - I'm to old to try and too young to die.
