If you are going to have the bike remapped with a PC3, then the base map is not hugely important. But starting from a good base map and PC3 map combination, will make it faster to tune. I have yet to find a PC3 map that doesn't need a lot of work at part throttle, but some are within 4-6% at WOT.
I would recommend starting with a derestricted map, with raised rev and speed limits, and a few other base changes. You can do this yourself with TuneECU for nothing more than the cost of a cable - CHEAP.
You shouldn't ask for anything. If well mapped, you should get just what you need - good output everywhere, smooth running, crisp response, and decent fuel consumption at cruise. To fully remap, it will take some time. Anyone that does this in short time, likely left a lot on the table.
