I'm starting my journey to reflash my ecu.

Order ODBlink MX+ - Completed, sitting at customs eta coming week
Order Andriod Pad (Galaxy Tab A9)- Completed
Load Tune ECU v6 - Completed
Register Tune ECU - pending. Now completed 26 Feb
derestict limiter - pending. Now completed 26 Feb
download attached penner map (AV5456 using 31253) - completed generating my own ETV3 table 26 Feb
reset engine adaptation - manual 12min routine test completed 26 Feb
update throttle maps - pending. Now completed 26 Feb
eventually bleed ABS - pending

eventually I received my OBDlnk mx+
now I can start exploring and hopefully figure out the evt tables and how things work. i mention this because there is still no clear consensus on which tables does what to which components.

You're ahead of me on this, I'm don't plan on doing this for a little while yet. After break in and once I'm used to the bike as it is I'll explore this option. I've been doing research though and am pretty familiar with the process, even have Tuneecu and my OBD Link already. I'll post the reply I got from this youtuber I asked about the different ETV tables later, it cleared up a lot of confusion.
 
You can get rid of the speed limiter with Tuneecu.
Not out of the box with TuneECU, while it has the check box it doesn't do anything for the Rocket. You need to pay the author to send you a standard map (for your VIN range) with the speed limit removed and use TuneECU to copy your modified tables into that map.

You should be able to load your stock map in the app. Then you do the checkbox and pay on the app. Then you can edit the stock map, including copying Penner’s map tables into the stock map. From the manual:

Oh good, Alain has updated the app to include that option, it was a manual process before. Win!
