I read somewhere that while storing, just starting it up is worse than not because of condensation or something.
Curious if anyone knows more about this?
 
Condensation comes about from fuel tanks that are not full. In my case the bike sits for 3 months over winter with a full fuel tank.
I like to start it and run it ...might even go down the street and back...just to keep the oils and greased parts moving.

You are correct.

If there is any condensation in the engine (which they all have) and you start it for a short period of time the water will mix with the oil. It may separate at first, but Starting over and over again it will eventually turn into a milk shake color. Then you get to do another oil change.

If you run the engine till the engine gets hot the water will evaporate. You would want to do this every time you start it.

All engines are designed this way.

As far as the oil sitting in the motor goes....the way i see it, if the oil is clean it probably wont have too many caustics in it compared to a discoloured oil. Dirty oil can do damage if left to sit in a stationary motor as we know.
I think if your bike has dirty oil when the time comes to store it, then change the oil first.
