What would you do?

Coolant was low or not visible and cap had popped off.

Can't get at the bleed screw so I did my best without it for now. Refilled. Fan seems to be working at the moment.
 
Cap popping on the overflow tank could be a sign of pressurisation ? Often related to a blow by on the head gasket !

I have no idea what that means but couldn't the cap have blown because the fan fuse blew and the heat built up because of no fan and that made the coolant expand and pop the top?

Very possibly , but overheating due to fan failure usually just dumps the coolant down the overflow . If it happens again whilst you know the fan is working I would be thinking about the head gasket !
