Where would I find stainless button head bolts to fit the front of the K-drive saddlebag bracket?
They are M10 X 75mm with 1.25mm thread.

Try contacting New Bonneville... K-Drive Saddlebags
Since K-Drive is out of business, it's hard to believe New Bonneville sells them. Supposedly Cs4 was their successor but they don't make the brackets and the bags are not Iparex. The company that now sells what appear to be K-Drive gear is Longride.

Give them a try,it says on their new page "if you don't see it on our site, let us know and we'll do our best to help you find it."

For a bolt like that I'd go to Anzor Fasteners (they may not be in Aussie) but they are a fastener shop that specializes in SS, we get a lot of button-head caps off them for work and I carry M10 x 50 SS buttonhead caps in my ute as stock. EDL Fasteners I think would also be a go and I'm pretty sure they're in Aus, they should be cheap as chips. Hope this helps.
