    With my body weight + gear, Werkes exhaust replacing the stock exhaust, and the Penner tune, the Rocket 3 has the same power:weight ratio as my Tiger 1200 GT Pro without bags. Slightly better, in fact. It's no slouch.

    There are O2 emulators out there that might work. For a post-cat sensor, you just need one that has the correct resistance. You should be able to read that value with an OBD scanner.

    In both cases, before going to the dealer I would try forcing the rear ABS to actuate (brake hard). Maybe that'll "jog it loose" or, at a minimum, let you know that the ABS solenoid isn't working properly if the tire locks up.

    The reason Triumph gave for the change is to increase the service life of the coolant from 3 years to 5 years. Inorganic acid salts (silicates, phosphates, borates, nitrites, and amines) only protect for 2-3 years. Organic acid salts aren't quite as protective but do protect for 5-10 years...

    Heated gear

    My overall coldest experience was a 3-hour ride at 9 degrees F (-13 C), and all I really needed was heated gloves. Everything else I just layered appropriately. Not to say other heated gear wouldn't have been more comfortable.
