So, the new shocks have arrived, quick question, can I fit them one at a time without having to put a jack under the bike (I don't have one as yet) whilst its on the side stand, or will this end in tears?

Be patient get a jack or take it to a specialist bike shop.

The nuts can be tight or seized and uneven excessive loads when perched on sidestand could easily have you lever weight off sidestand with sad results. Done similar TOO many times! :(

Can't quite see a price on this lifter... and you phone will need charging soon!
 
Took off one at a time is how I fitted my YSS shocks. Not an issue.

HoweverI did make a bike lifter out of an old sizzor jack with a plate welded on the top and bottom of it so I could lift the back up until full extended suspension travel achieved, so I could measure static sag.
