Pannier mounting kit

Once you have installed the pannier mounts, is there a 'quick release' way of removing the mounts from the bike or do you have to remove the undertray etc to get them off?

Simply put, no. They are bolted through the fender under the pinion. To remove them, you need to remove the seat, remove the bolts.

when the panniers are off would the brackets work as a sort of grab rail for a pillion?

They won't work for that as they are too close to the bodywork and there isn't enough room for fingers to get underneath. ?They do work great for a tiedown point.
