It has been done, but not recommended by those who did it.

If you're looking for more noise there are a lot of options for aftermarket exhaust systems. Removing the baffles alone will not improve engine efficiency but will adversely affect your fuel/air mix. No matter how you approach an exhaust change you'll need to remap your fuel ratios to get it to run right.
