The only challenge you might have using dimpled bars is tightening the control clamp to the bar. There won't be any wires to occupy the space made by the dimples. The clamp may feel loose and the controls rotate. Just speculation on my part but the dimple does make the diameter smaller.
 
If you change the bars on a touring you have to drill a small hole in the bars because the controls have a little nub that sticks out and goes in the hole this stop the controls from moving
 
Norm I made handlebars for my 13' R3T from two Road glide handlebars they were dimpled and there was no problems with getting the controls tight.Although I had to do some grinding on the master cylinder because of different angle on the handlebars.
