New owner to an 07 touring and am curious how different saddlebag fitment would be compared to an 08 touring. Im of the understanding that in 07 the touring model was just an options pack added onto the classic.

Should I be looking for roadster bags or touring bags? Does it matter as far as fitment goes?

The touring pack was exactly that...a tour ( as opposed to the Touring) pack fitted to a classic. The classic is very different to the later released Touring...besides the single headlight and speedometer location, the touring was narrower in the rear so none of the accessories are compatible...unless you can fabricate your own mountings etc...
Classic and Roadster are very similar and most of the accessories are interchangeable.

It was throwing me off how some bags like vikings list specific models/years for compatability, but corbin lists theirs compatable with all 2004-2018's.

So if i stick with bags compatable with roadster, i should be good to go?

Don't believe that bull from viking about model specific. There stuff is all universal I just installed bags with the quick realease mounts. Not one bolt was really the right size. I had to spend $20 on right size bolts. I called them about the issue they promptly sent me another bag of the wrong size hardware.:banghead::banghead::banghead:
