How can I ascertain that I have an exhaust leak in the Cat-Delete/pipes connections?
Found one new gasket so far, still looking thru stuff I think I got a few more laying around in all this junk .

The shop in Knoxville must have done a great job on my Viking install since I have no leaks. The pipe works and sounds great.

Your bike HAS gotten louder. If you recall, I asked if you changed something last weekend because it was louder.

I would bet the packing is breaking down though. A leak will sound sort of like an engine miss

Jardine junk...??...Gold nowadays..
I used two gaskets...lotsa sealant and tightened, heated her up..retightened several times..always got a wee bit more...

We can check them next time we go out. The pipes are TORs and they were new when I installed them.

I had some sealing issues with my stock bike with stock header, and my Viking Header, both were solved by throwing away the old used factory gaskets and scrounging some alloy ones "the banned one" had laser cut. Cleaned ports out well, fitted Viking gaskets and instant seal on both bikes.
